Best Pinterest Recipes
Every year my dad’s side of the family comes to our house on Christmas day.
Family members usually bring a dish and then I make a few as well.
Some of my favorites are here and a few I would love to try making one day.
I would NEVER call myself Martha Stewart in the kitchen.
In fact, I had a sign hanging for years that said: “Martha Stewart Doesn’t Live Here”.
Don’t get me wrong I can cook a FEW really yummy meals but I would say cooking is my superpower.
That said check out all my favorite holiday recipes.
1. Easy Cold Spinach Dip

My cousin Claudia makes this every year for Christmas and it is delicious!
Personally, I like to eat it with thin pretzels or carrots but others like it with bread.
Bread is not really my thing so I never go with that option.
I probably eat half of what she brings all by myself lol.
2. Mediterranean Quinoa Salad

This is one of the recipes I’d love to make!
I recently had a similar version at a friends BBQ and it was to die for!
This is a recipe I plan on making really soon.
3. Greek Kale Salad with Lemon Olive Oil Dressing
Get The Recipe Here: Greek Kale Salad
Every year at Christmas I make a salad and have learned that if the dressing is mixed in the salad will go.
If the dressing is on the side it won’t.
Usually, I make a classic salad with balsamic vinegar and Good Seasons Italian dressing but this would be a good one to try for a change.
4. Lemon Chicken Orzo Soup

We have ordered this soup from the Greek restaurant and it’s so yummy.
This is another one on the list of recipes to make.
It would be nice to add as an appetizer for the guests that arrive early.
5. Island-Style Seared Scallops with Mango Salsa

This is another one I’d LOVE to make.
I really enjoy scallops but have yet to master cooking them at home.
Last time I tried I wanted to sear the scallops but then my son who is an amazing cook informed me I needed a searing pan.
Clearly not me lol.
6. Garlic Butter Shrimp Scampi

Every Christmas my Uncle Ralphy and his family come from NJ.
That is all I will say.
So last year they arrived at 11 pm and it was weird because usually, Yolanda brings a ton of food AFTER we are done with dessert.
After a few minutes, we realized they came in to make sure everyone was still there before they brought in ALL the food from the car.
Yolanda is an AMAZING cook and NEVER disappoints!
She brings Pastelon, Pernil, Arroz con Ganzules, Macaroni Salad, and this year Shrimp Scampi which tasted amazing.
All from NJ!
Every year we tell Yolanda to forget the food just come earlier because we have plenty of food already.
We try but that is yet to happen.
Either way, we love having them and are super grateful for the BEST FOOD EVER each Christmas night.
7. Easy Salmon Recipe with Maple Dijon Sauce

This one I have made and it is quick and yummy!!
Check out the recipe and let me know what you think.
You just brush the glaze, bake in the oven and it’s done in about 20 min.
8. Authentic Spanish Seafood Paella Recipe

I have never made Paella because it just looks like a lot of work and I’m SCARED.
I’m also pretty sure my rice would come out sticky which I hate.
That said we usually order this and have even picked it up on Christmas Day before.
9. Ropa Vieja – Cuban Shredded Beef

This is a recipe I love making and it tastes so good.
My whole family likes it although my daughter complains if I make it too often.
It’s easy to make but you cook it for about 2-3 hours so the meat falls apart.
I’m thinking of adding this one to the Christmas Day Eve menu this year.
10. Peruvian Fried Rice (Arroz Chaufa)

This is another recipe I’d love to make.
We order it all the time from the Peruvian restaurant and it’s so yummy!
11. Best Chicken Marsala

So this is not my exact recipe but I make a mean dish of Chicken Marsala.
My family has come to expect it from me but it is so much work.
Next time I make it I’ll actually do a recipe post of my version.
My sister is the one who passed me the recipe and Martha Stewart DOES actually live in her house.
12. Lemon Chicken Recipe

Another good one that I can make really well.
My version is a combination of my mother and cousin Camille’s recipes.
Both are good but mine is yummy as well.
That’s another one I’ll be adding to a future post so do stay tuned.
13. Ronzoni Lasagna Recipe

This is the version of Lasagna I make.
It taste really good and feeds a lot.
The only thing I have found over the years is it takes a really long time to heat up if you have it in the fringe before your guests arrive.
Keep that in mind especially if you are heating multiple dishes in the oven at the same time.
14. Italian Rainbow Cookies
Get The Recipe Here: Italian Rainbow Cookies
My cousin Cara make The. Best. rainbow. Cookies.
They are amazing and she makes me my own tin which I have to hide from my daughter who would eat them all.
I have no idea what her recipe is but this one looks just as pretty.
Don’t forget to display these on a pretty dish if you make them.
We all know I LOVE my Unicorns & Rainbows so it’s only fitting these are my favorite cookies!
15. Easy Cheese Flan Recipe From Puerto Rico
Flan de Queso is a smooth cream cheese custard topped with a decadent layer of homemade caramel. Using only 5 ingredients and less than 5 minutes of prep time, this rich variation on traditional flan is one that you can master, fast! Serve chilled for a sweet finale to your next family dinner.

So this one is MY RECIPE.
It’s so easy and another favorite in my family.
Starting at Thanksgiving I usually make around four Puerto Rican Cheese Flans.
It is one of my highest ranking pins and saves by far.
Try it out and let me know what you think.
That’s a warp on the BEST Pinterest Recipes for this Holiday Season.
Have a awesome day full of Unicorns and Rainbows.
